Step 1: Hand-Picking with Care
Unlike large coffee-producing countries where mechanical harvesting is widely used, many coffee farms in Bali still rely on hand-picking.
Farmers carefully select coffee cherries that have reached the right level of ripeness, usually recognized by their deep red color. This requires patience and experience because cherries on the same coffee tree do not necessarily ripen at the same time.
As a result, farmers may return to the same tree several times throughout the harvest season.
Selective picking takes more time and effort than harvesting large quantities at once, but it helps ensure that only properly ripe cherries enter the processing stage. This can contribute to greater consistency and quality in the final coffee.
Step 2: Choosing the Right Processing Method
Once harvested, coffee cherries need to be processed promptly to prevent unwanted fermentation and quality deterioration.

Full-Wash Process
In the full-wash process, the skin and fruit pulp are removed from the coffee cherries. The beans are then fermented in water to remove the remaining mucilage before being thoroughly washed.

Natural or Dry Process

Step 3: Drying Takes Patience

Drying may take several days or longer depending on the processing method, weather, and drying conditions. Although it may look simple, this stage is extremely important.
Coffee that dries too quickly or unevenly may develop quality problems, while excessive moisture or prolonged exposure to unfavorable conditions can increase the risk of mold and unwanted flavors.
